Description

Recreate the beloved flavors of Texas Roadhouse with this indulgent smothered chicken topped with sautéed onions, mushrooms, and melted cheese.


Ingredients

  • 3 boneless chicken breasts
  • 1 ¼ cup Monterey Jack cheese (or Cheddar)
  • 1 whole onion
  • 8 oz mushrooms
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 2 tsp garlic powder
  • 2 tsp chicken bouillon
  • 1 tbsp white wine vinegar


Instructions

  1. Slice the chicken breasts lengthwise and season with chicken bouillon and garlic powder. Let rest for 15 minutes.
  2. Chop the onion and mushrooms, and set aside. Shred the cheese.
  3. Preheat oven to 375℉ (190℃). In a pan, cook the chicken for 3 minutes on each side with olive oil and butter until golden brown.
  4. Cool the chicken on a plate for 5 minutes.
  5. Sauté the mushrooms and onions in the same pan for 2-3 minutes, adding white wine vinegar towards the end.
  6. Line a baking sheet and arrange chicken breasts. Top with sautéed mushrooms, onions, and cheese.
  7. Bake for 10 minutes or until cheese melts. Cool for 5-10 minutes before serving.

Notes

For extra flavor, consider marinating the chicken or adding fresh herbs as a garnish.
