Recreate the beloved flavors of Texas Roadhouse with this indulgent smothered chicken topped with sautéed onions, mushrooms, and melted cheese.
Ingredients
- 3 boneless chicken breasts
- 1 ¼ cup Monterey Jack cheese (or Cheddar)
- 1 whole onion
- 8 oz mushrooms
- 1 tbsp butter
- 1 tbsp olive oil
- 2 tsp garlic powder
- 2 tsp chicken bouillon
- 1 tbsp white wine vinegar
Instructions
- Slice the chicken breasts lengthwise and season with chicken bouillon and garlic powder. Let rest for 15 minutes.
- Chop the onion and mushrooms, and set aside. Shred the cheese.
- Preheat oven to 375℉ (190℃). In a pan, cook the chicken for 3 minutes on each side with olive oil and butter until golden brown.
- Cool the chicken on a plate for 5 minutes.
- Sauté the mushrooms and onions in the same pan for 2-3 minutes, adding white wine vinegar towards the end.
- Line a baking sheet and arrange chicken breasts. Top with sautéed mushrooms, onions, and cheese.
- Bake for 10 minutes or until cheese melts. Cool for 5-10 minutes before serving.
Notes
For extra flavor, consider marinating the chicken or adding fresh herbs as a garnish.
