Description

Delicious and quick quesadillas filled with tender shredded chicken, gooey cheese, and a creamy sauce, reminiscent of the beloved Taco Bell version.


Ingredients

  • 2 cups grilled chicken, shredded
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 4 large tortillas
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tablespoon taco seasoning
  • 1 tablespoon olive oil
  • Optional toppings: salsa, guacamole, or jalapeños


Instructions

  1. Combine the sour cream, mayonnaise, and taco seasoning in a mixing bowl to create the quesadilla sauce.
  2. Heat the olive oil in a skillet over medium heat.
  3. Place one tortilla in the skillet. Sprinkle half of the cheese on one half, add shredded chicken, and drizzle some quesadilla sauce over the top.
  4. Fold the tortilla over and cook until golden brown on both sides.
  5. Remove from the skillet and repeat with the remaining ingredients.
  6. Serve hot with optional toppings.

Notes

Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to 2 months. Reheat in a skillet or microwave.
