Delicious and quick quesadillas filled with tender shredded chicken, gooey cheese, and a creamy sauce, reminiscent of the beloved Taco Bell version.
Ingredients
- 2 cups grilled chicken, shredded
- 2 cups shredded cheese (cheddar or Mexican blend)
- 4 large tortillas
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 tablespoon taco seasoning
- 1 tablespoon olive oil
- Optional toppings: salsa, guacamole, or jalapeños
Instructions
- Combine the sour cream, mayonnaise, and taco seasoning in a mixing bowl to create the quesadilla sauce.
- Heat the olive oil in a skillet over medium heat.
- Place one tortilla in the skillet. Sprinkle half of the cheese on one half, add shredded chicken, and drizzle some quesadilla sauce over the top.
- Fold the tortilla over and cook until golden brown on both sides.
- Remove from the skillet and repeat with the remaining ingredients.
- Serve hot with optional toppings.
Notes
Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to 2 months. Reheat in a skillet or microwave.
