Description
Recreate the smoky, spicy flavor of Chipotle’s chicken burritos or tacos right at home with this easy and delicious recipe.
Ingredients
- 4 lbs boneless, skinless chicken thighs or breasts
- 4 garlic cloves, minced
- 1 small white or red onion, quartered
- 1/4 cup distilled vinegar
- 2 tbsp ancho chili powder
- 2 tsp ground cumin
- 1 tsp dried oregano
- 4 tbsp vegetable oil (or canola/rice bran)
- 1 tsp salt
- 1/2 tsp freshly ground black pepper
- 1 chipotle pepper in adobo sauce
- 2 tbsp adobo sauce
Instructions
- Marinate the chicken: In a large bowl, combine the minced garlic, onion, distilled vinegar, ancho chili powder, cumin, oregano, 2 tablespoons of oil, salt, black pepper, chipotle pepper, and adobo sauce. Mix well. Add the chicken and ensure it’s well-coated. Let it marinate for at least 60 minutes (or overnight for more flavor).
- Grill or cook:
- Grilling: Preheat your grill to medium-high. Remove the chicken from the marinade, shaking off any excess. Grill for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
- Stovetop: In a large skillet, heat the remaining 2 tablespoons of oil over medium-high heat. Add the chicken, cooking for about 6-7 minutes on each side until cooked through.
- Oven: Preheat your oven to 400°F. Place the marinated chicken in a baking dish and cover it with foil. Bake for 25-30 minutes, or until cooked through, then broil for 3-5 minutes to achieve a charred finish.
- Shred and serve: Once cooked, remove the chicken from heat and let it rest for a few minutes. Then shred the chicken using two forks for that perfect texture.
Notes
For added heat, feel free to include more chipotle peppers or sauce in the marinade. Store leftovers in an airtight container for up to 4 days.
