Description

Coconut tarts feature a sweet, chewy filling and a buttery crust, perfect for any occasion.


Ingredients

  • 1 cup desiccated coconut
  • 1 cup sweetened condensed milk
  • 1 cup shortcrust pastry
  • 1/4 cup jam (e.g., raspberry or strawberry)
  • 1 egg (optional, for binding)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Roll out the shortcrust pastry and line a baking tray with tartlet tins.
  3. In a bowl, mix the desiccated coconut, sweetened condensed milk, and egg (if using) until well combined.
  4. Spoon the coconut mixture into each tart case.
  5. Drop a small spoonful of jam on top of the coconut mixture in each tart.
  6. Bake for 15-20 minutes or until the tops are light golden and the pastry is cooked through.
  7. Allow to cool before serving. Enjoy your coconut tarts!

Notes

For a vegan version, omit the egg and substitute the jam with your favorite flavor.
