Ingredients
- 1 cup desiccated coconut
- 1 cup sweetened condensed milk
- 1 cup shortcrust pastry
- 1/4 cup jam (e.g., raspberry or strawberry)
- 1 egg (optional, for binding)
Instructions
- Preheat your oven to 350°F (175°C).
- Roll out the shortcrust pastry and line a baking tray with tartlet tins.
- In a bowl, mix the desiccated coconut, sweetened condensed milk, and egg (if using) until well combined.
- Spoon the coconut mixture into each tart case.
- Drop a small spoonful of jam on top of the coconut mixture in each tart.
- Bake for 15-20 minutes or until the tops are light golden and the pastry is cooked through.
- Allow to cool before serving. Enjoy your coconut tarts!
Notes
For a vegan version, omit the egg and substitute the jam with your favorite flavor.
