Ingredients
- 1 pie crust
- 4 cups rhubarb, chopped
- 1 cup granulated sugar
- 1/4 cup all-purpose flour
- 1 tablespoon lemon juice
- 1/2 teaspoon ground cinnamon
- 1/2 cup brown sugar
- 1/2 cup oats
- 1/2 cup butter, melted
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, toss the chopped rhubarb with granulated sugar, flour, lemon juice, and cinnamon until well-coated.
- Pour the rhubarb mixture into the prepared pie crust, spreading it evenly.
- In another bowl, mix together brown sugar, oats, and melted butter until combined. Spread this crumble mixture evenly on top of the rhubarb.
- Bake the pie for about 45-50 minutes, or until the rhubarb is bubbly and the crumble is golden brown.
- Allow to cool before serving, letting the flavors meld together.
