Description

Ingredients

  • 1 pie crust
  • 4 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup brown sugar
  • 1/2 cup oats
  • 1/2 cup butter, melted


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, toss the chopped rhubarb with granulated sugar, flour, lemon juice, and cinnamon until well-coated.
  3. Pour the rhubarb mixture into the prepared pie crust, spreading it evenly.
  4. In another bowl, mix together brown sugar, oats, and melted butter until combined. Spread this crumble mixture evenly on top of the rhubarb.
  5. Bake the pie for about 45-50 minutes, or until the rhubarb is bubbly and the crumble is golden brown.
  6. Allow to cool before serving, letting the flavors meld together.
