Description

A delightful, creamy side dish featuring tender pasta, crunchy vegetables, and a rich dressing, perfect for luaus, barbecues, and family gatherings.

Ingredients

  • 2 cups elbow macaroni
  • 1/2 cup grated carrots
  • 1/2 cup sweet onion
  • 1/4 cup diced celery
  • 1 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • Optional: 1/4 cup diced pineapple or chopped green onions

Instructions

  1. Cook the pasta: Begin by boiling a large pot of salted water. Add the elbow macaroni and cook until just al dente, according to package instructions. Drain and rinse under cold water to stop the cooking process.
  2. Prep the veggies: While the pasta is cooking, finely chop the carrots, onion, and celery.
  3. Prepare the dressing: In a large bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and pepper until smooth.
  4. Combine everything: Once the pasta has cooled, add it to the bowl with the dressing. Mix in the chopped vegetables and stir until everything is well coated.
  5. Chill before serving: Cover the bowl with plastic wrap and refrigerate for at least an hour.

Notes

Consider adding diced mango or shredded coconut for a fruity flair, or shredded chicken for a protein boost.
