Ingredients
- 4 large onions, thinly sliced
- 4 cups beef or vegetable broth
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme
- 1 bay leaf
- Salt and pepper to taste
- 1 cup Gruyère cheese, grated
- 4 slices of garlic French bread
Instructions
- Caramelize the onions: Heat olive oil and butter in a large pot over medium heat. Add sliced onions and sauté until caramelized, about 20-30 minutes. Stir occasionally to prevent burning.
- Add the minced garlic and cook for another minute.
- Pour in the broth and add thyme, bay leaf, salt, and pepper. Bring to a simmer and cook for 20 minutes.
- Preheat your oven to 350°F (175°C).
- Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls, topping each with a slice of garlic French bread and a generous amount of Gruyère cheese.
- Place the bowls on a baking sheet and bake for about 10 minutes, or until the cheese is bubbly and golden.
- Serve hot and enjoy every delightful spoonful!
Notes
For a vegetarian option, use vegetable broth instead of beef broth. Consider garnishing with parsley for added color.
