Description

All the cozy flavor of a classic cinnamon sugar donut baked into a soft, tender quick bread loaf.


Ingredients

  • 2 cups (250 g) all-purpose flour
  • 1 ½ cups (300 g) granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon kosher salt
  • 1 ¼ cups (306 g) whole milk
  • 1 large egg, at room temperature
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon vanilla extract
  • ¼ cup (½ stick / 57 g) unsalted butter, melted (for coating)
  • ½ cup (100 g) granulated sugar (for coating)
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg


Instructions

  1. Preheat oven to 350°F (175°C) and spray an 8.5 x 4.5-inch loaf pan with nonstick cooking spray.
  2. In a large mixing bowl, whisk together flour, granulated sugar, baking powder, and salt.
  3. In a separate bowl, whisk together whole milk, egg, melted butter, and vanilla extract until smooth.
  4. Pour the milk mixture into the bowl with the dry ingredients and gently stir until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 60–70 minutes, until the top is golden brown and a toothpick comes out with a few moist crumbs.
  7. Cool the bread in the pan for about 10 minutes, then remove and place on parchment or a wire rack.
  8. In a small bowl, stir together granulated sugar, ground cinnamon, and ground nutmeg.
  9. Brush the warm loaf with melted butter, then sprinkle the sugar mixture all over.
  10. Let the loaf cool to room temperature, slice into 12 pieces, and serve.

Notes

Use whole milk for a richer texture and do not overmix the batter to keep the bread tender.
