Description
All the cozy flavor of a classic cinnamon sugar donut baked into a soft, tender quick bread loaf.
Ingredients
- 2 cups (250 g) all-purpose flour
- 1 ½ cups (300 g) granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon kosher salt
- 1 ¼ cups (306 g) whole milk
- 1 large egg, at room temperature
- 2 tablespoons unsalted butter, melted
- 1 tablespoon vanilla extract
- ¼ cup (½ stick / 57 g) unsalted butter, melted (for coating)
- ½ cup (100 g) granulated sugar (for coating)
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
Instructions
- Preheat oven to 350°F (175°C) and spray an 8.5 x 4.5-inch loaf pan with nonstick cooking spray.
- In a large mixing bowl, whisk together flour, granulated sugar, baking powder, and salt.
- In a separate bowl, whisk together whole milk, egg, melted butter, and vanilla extract until smooth.
- Pour the milk mixture into the bowl with the dry ingredients and gently stir until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 60–70 minutes, until the top is golden brown and a toothpick comes out with a few moist crumbs.
- Cool the bread in the pan for about 10 minutes, then remove and place on parchment or a wire rack.
- In a small bowl, stir together granulated sugar, ground cinnamon, and ground nutmeg.
- Brush the warm loaf with melted butter, then sprinkle the sugar mixture all over.
- Let the loaf cool to room temperature, slice into 12 pieces, and serve.
Notes
Use whole milk for a richer texture and do not overmix the batter to keep the bread tender.
