Description
A cozy, wholesome side dish featuring roasted sweet potatoes and apples sprinkled with cinnamon, perfect for fall and holiday feasts.
Ingredients
- 2 medium sweet potatoes, cut into ½” cubes (about 4 cups)
- 2 medium apples, cut into ½” cubes (about 2 cups)
- 3 Tbsp salted butter, melted & divided (or coconut oil for dairy-free)
- 1 tsp fine sea salt
- 2 Tbsp pure maple syrup (or honey)
- 1 tsp ground cinnamon
Instructions
- Preheat oven to 425°F (220°C) and grease a large baking sheet.
- Toss cubed sweet potatoes with 2 Tbsp melted butter and sea salt. Spread evenly on the sheet.
- Roast for 20 minutes, stirring halfway through, until lightly golden.
- While roasting, toss apples with the remaining butter, maple syrup, and cinnamon.
- Remove the sweet potatoes, add the apple mixture, and stir to combine. Spread in a single layer.
- Return to the oven for 15–20 minutes until both potatoes and apples are caramelized and tender.
- Serve warm for a cozy fall side or festive holiday dish.
Notes
Skin-on apples & potatoes for extra nutrients and texture. Consider adding chopped pecans or walnuts for extra crunch.
