Description

A cozy, wholesome side dish featuring roasted sweet potatoes and apples sprinkled with cinnamon, perfect for fall and holiday feasts.


Ingredients

  • 2 medium sweet potatoes, cut into ½” cubes (about 4 cups)
  • 2 medium apples, cut into ½” cubes (about 2 cups)
  • 3 Tbsp salted butter, melted & divided (or coconut oil for dairy-free)
  • 1 tsp fine sea salt
  • 2 Tbsp pure maple syrup (or honey)
  • 1 tsp ground cinnamon


Instructions

  1. Preheat oven to 425°F (220°C) and grease a large baking sheet.
  2. Toss cubed sweet potatoes with 2 Tbsp melted butter and sea salt. Spread evenly on the sheet.
  3. Roast for 20 minutes, stirring halfway through, until lightly golden.
  4. While roasting, toss apples with the remaining butter, maple syrup, and cinnamon.
  5. Remove the sweet potatoes, add the apple mixture, and stir to combine. Spread in a single layer.
  6. Return to the oven for 15–20 minutes until both potatoes and apples are caramelized and tender.
  7. Serve warm for a cozy fall side or festive holiday dish.

Notes

Skin-on apples & potatoes for extra nutrients and texture. Consider adding chopped pecans or walnuts for extra crunch.
