Description

Delightful muffins filled with a sweet, gooey cinnamon filling, perfect for breakfast or brunch gatherings.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 1/4 cup packed brown sugar


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, granulated sugar, baking powder, and salt.
  3. In another bowl, whisk together the melted butter, milk, eggs, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry mix, stirring until just combined. Avoid overmixing for fluffier muffins.
  5. In a small bowl, combine the brown sugar and cinnamon for the filling.
  6. Fill each muffin cup halfway with batter. Then, sprinkle with the cinnamon filling. Top with the remaining batter.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool for a few minutes before serving.

Notes

These muffins are best served warm, perhaps with butter or a dusting of powdered sugar. Store in an airtight container.
