Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 2 large eggs
- 1 tablespoon vanilla extract
- 1 tablespoon ground cinnamon
- 1/4 cup packed brown sugar
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the flour, granulated sugar, baking powder, and salt.
- In another bowl, whisk together the melted butter, milk, eggs, and vanilla extract until well combined.
- Pour the wet ingredients into the dry mix, stirring until just combined. Avoid overmixing for fluffier muffins.
- In a small bowl, combine the brown sugar and cinnamon for the filling.
- Fill each muffin cup halfway with batter. Then, sprinkle with the cinnamon filling. Top with the remaining batter.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool for a few minutes before serving.
Notes
These muffins are best served warm, perhaps with butter or a dusting of powdered sugar. Store in an airtight container.
