Ingredients
- 1 cup white rice
- 2 cups water
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 1 tablespoon olive oil
- Salt, to taste
Instructions
- Rinse the rice under cold water until it runs clear.
- Cook the rinsed rice with 2 cups of water in a pot and bring it to a boil.
- Simmer on low heat, covered, for 15-20 minutes until water is absorbed.
- Prepare the dressing by mixing lime juice, olive oil, and salt in a small bowl.
- Fluff the rice with a fork, then pour the lime dressing over and mix in the chopped cilantro.
- Serve warm as a side dish or over your favorite protein.
Notes
For a twist, you can use brown rice or quinoa for added nutrition. Adjust salt and lime to taste.
