Description

A zesty and flavorful side dish that brings brightness to any meal, perfect for taco nights and gatherings.


Ingredients

  • 1 cup white rice
  • 2 cups water
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • Salt, to taste


Instructions

  1. Rinse the rice under cold water until it runs clear.
  2. Cook the rinsed rice with 2 cups of water in a pot and bring it to a boil.
  3. Simmer on low heat, covered, for 15-20 minutes until water is absorbed.
  4. Prepare the dressing by mixing lime juice, olive oil, and salt in a small bowl.
  5. Fluff the rice with a fork, then pour the lime dressing over and mix in the chopped cilantro.
  6. Serve warm as a side dish or over your favorite protein.

Notes

For a twist, you can use brown rice or quinoa for added nutrition. Adjust salt and lime to taste.
