Description

A refreshing Cilantro Lime Pasta Salad bursting with flavor, perfect for warm weather gatherings and meal prep.


Ingredients

  • Pasta (your choice, such as penne or fusilli)
  • Canned chickpeas
  • Cucumber, diced
  • Corn (frozen or canned)
  • Greek yogurt
  • Ripe avocado
  • Fresh cilantro, chopped
  • Lime juice, freshly squeezed
  • Salt and pepper to taste


Instructions

  1. Start by cooking the pasta according to the package instructions. Once done, drain it and let it cool.
  2. In a large mixing bowl, combine the cooled pasta, chickpeas, diced cucumber, and corn.
  3. In a separate bowl, blend the Greek yogurt, avocado, fresh cilantro, lime juice, salt, and pepper until smooth and creamy.
  4. Pour the dressing over the pasta salad and mix everything well to ensure even coating.
