Ingredients
- Pasta (your choice, such as penne or fusilli)
- Canned chickpeas
- Cucumber, diced
- Corn (frozen or canned)
- Greek yogurt
- Ripe avocado
- Fresh cilantro, chopped
- Lime juice, freshly squeezed
- Salt and pepper to taste
Instructions
- Start by cooking the pasta according to the package instructions. Once done, drain it and let it cool.
- In a large mixing bowl, combine the cooled pasta, chickpeas, diced cucumber, and corn.
- In a separate bowl, blend the Greek yogurt, avocado, fresh cilantro, lime juice, salt, and pepper until smooth and creamy.
- Pour the dressing over the pasta salad and mix everything well to ensure even coating.
- Chill in the refrigerator for at least 30 minutes before serving. Enjoy!
