Ingredients
- 1 pound boneless, skinless chicken breasts
- 2 limes, juiced and zested
- 1 tablespoon olive oil
- 2 tablespoons cilantro, chopped
- 1 clove garlic, grated
- 1 jalapeño, finely diced (optional)
- Salt and pepper to taste
Instructions
- Prep the chicken (optional but helpful): Pound to an even thickness if needed.
- Make the marinade: Combine lime juice, zest, oil, cilantro, garlic, jalapeño, salt, and pepper in a bowl.
- Marinate: Add chicken to a zip-top bag or dish, pour in marinade, and coat. Marinate for at least 30 minutes or overnight.
- Preheat the grill: Heat to medium-high and oil the grates.
- Grill: Cook chicken 3–5 minutes per side until nicely charred and cooked through (internal temp 165°F).
- Rest and slice: Let it rest for 5 minutes before slicing.
Notes
For extra flavor, add a splash of tequila to the marinade. Store cooked chicken in an airtight container for 3-4 days or freeze for up to 2-3 months.
