Description

Juicy grilled chicken marinated in a bright and zesty cilantro lime mixture, perfect for tacos, salads, or bowls.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 limes, juiced and zested
  • 1 tablespoon olive oil
  • 2 tablespoons cilantro, chopped
  • 1 clove garlic, grated
  • 1 jalapeño, finely diced (optional)
  • Salt and pepper to taste


Instructions

  1. Prep the chicken (optional but helpful): Pound to an even thickness if needed.
  2. Make the marinade: Combine lime juice, zest, oil, cilantro, garlic, jalapeño, salt, and pepper in a bowl.
  3. Marinate: Add chicken to a zip-top bag or dish, pour in marinade, and coat. Marinate for at least 30 minutes or overnight.
  4. Preheat the grill: Heat to medium-high and oil the grates.
  5. Grill: Cook chicken 3–5 minutes per side until nicely charred and cooked through (internal temp 165°F).
  6. Rest and slice: Let it rest for 5 minutes before slicing.

Notes

For extra flavor, add a splash of tequila to the marinade. Store cooked chicken in an airtight container for 3-4 days or freeze for up to 2-3 months.
