Description

A vibrant salad combining crunchy cauliflower and broccoli with a creamy avocado dressing, perfect for picnics or casual dinners.


Ingredients

  • 1 cup chopped broccoli
  • 1 cup chopped cauliflower
  • 1 cup corn (fresh or frozen)
  • 1 can chickpeas, drained and rinsed
  • 1 ripe avocado
  • 2 tablespoons lime juice
  • Salt and pepper to taste
  • Optional: cherry tomatoes, red onion, or other vegetables


Instructions

  1. In a large bowl, combine the chopped broccoli, cauliflower, corn, and chickpeas.
  2. In a separate bowl, mash the ripe avocado until smooth, then mix in the lime juice and season with salt and pepper.
  3. Pour the creamy avocado dressing over the salad mixture and toss gently to combine.
