A vibrant salad combining crunchy cauliflower and broccoli with a creamy avocado dressing, perfect for picnics or casual dinners.
Ingredients
- 1 cup chopped broccoli
- 1 cup chopped cauliflower
- 1 cup corn (fresh or frozen)
- 1 can chickpeas, drained and rinsed
- 1 ripe avocado
- 2 tablespoons lime juice
- Salt and pepper to taste
- Optional: cherry tomatoes, red onion, or other vegetables
Instructions
- In a large bowl, combine the chopped broccoli, cauliflower, corn, and chickpeas.
- In a separate bowl, mash the ripe avocado until smooth, then mix in the lime juice and season with salt and pepper.
- Pour the creamy avocado dressing over the salad mixture and toss gently to combine.
- For an extra pop of flavor, add in cherry tomatoes or red onion as desired.
