A creamy yet light chocolate chia seed pudding that is perfect for breakfast or dessert and rich in nutrients.
Ingredients
- 1/2 cup chia seeds (about 80 g)
- 2 cups almond milk (or any non-dairy milk) (480 ml)
- 1/3 cup cocoa powder (about 30 g)
- 1/4 cup maple syrup (or sweetener of choice) (60 ml)
- 1 teaspoon vanilla extract (5 ml)
- Pinch of salt
Instructions
- Whisk the almond milk, cocoa powder, maple syrup, vanilla extract, and a pinch of salt until smooth.
- Stir in the chia seeds, ensuring they are evenly distributed.
- Let the mixture sit at room temperature for 10 minutes, then stir again.
- Cover the bowl or divide it into jars. Refrigerate for at least 2 hours, preferably overnight, until thickened.
- Before serving, stir once more and adjust sweetness or texture as needed.
Notes
For a richer pudding, swap 1 cup (240 ml) of almond milk for full-fat coconut milk. For a smoother texture, blend the pudding after it thickens.
