Description

These chocolate brownie cookies are fudgy with crackly tops, combining the richness of brownies and the chewiness of cookies, making them a perfect treat for any occasion.


Ingredients

  • 200 g dark chocolate (70% solids), finely chopped
  • 125 g unsalted butter, cubed
  • 125 g caster or granulated sugar
  • 90 g soft light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 130 g plain flour
  • 3 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1-2 teaspoons flaked sea salt (optional)


Instructions

  1. Preheat your oven to 180°C (160°C fan). Line your baking trays with baking paper and set aside.
  2. In a medium heatproof bowl, combine the chopped chocolate and cubed butter. Melt over a saucepan of gently simmering water, stirring occasionally. Remove from heat and set aside.
  3. In an electric mixer, combine both sugars, eggs, and vanilla extract. Beat on medium-high speed for 5 minutes until pale and fluffy.
  4. Gradually mix in melted chocolate and butter until just combined.
  5. Sift flour, cocoa, baking powder, and salt into a large bowl, then fold gently into the chocolate mixture.
  6. Using a cookie scoop, drop dough balls onto the prepared baking tray with space for spread. Sprinkle flaked sea salt, if using.
  7. Bake for 12 minutes. Allow cooling on the tray for at least 20 minutes before transferring to a wire rack.

Notes

For extra crackly tops, chill the dough for 30 minutes before baking. Use high-quality chocolate for the best flavor.
