Description
These chocolate brownie cookies are fudgy with crackly tops, combining the richness of brownies and the chewiness of cookies, making them a perfect treat for any occasion.
Ingredients
- 200 g dark chocolate (70% solids), finely chopped
- 125 g unsalted butter, cubed
- 125 g caster or granulated sugar
- 90 g soft light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 130 g plain flour
- 3 tablespoons unsweetened cocoa powder
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1-2 teaspoons flaked sea salt (optional)
Instructions
- Preheat your oven to 180°C (160°C fan). Line your baking trays with baking paper and set aside.
- In a medium heatproof bowl, combine the chopped chocolate and cubed butter. Melt over a saucepan of gently simmering water, stirring occasionally. Remove from heat and set aside.
- In an electric mixer, combine both sugars, eggs, and vanilla extract. Beat on medium-high speed for 5 minutes until pale and fluffy.
- Gradually mix in melted chocolate and butter until just combined.
- Sift flour, cocoa, baking powder, and salt into a large bowl, then fold gently into the chocolate mixture.
- Using a cookie scoop, drop dough balls onto the prepared baking tray with space for spread. Sprinkle flaked sea salt, if using.
- Bake for 12 minutes. Allow cooling on the tray for at least 20 minutes before transferring to a wire rack.
Notes
For extra crackly tops, chill the dough for 30 minutes before baking. Use high-quality chocolate for the best flavor.
