Delicious pancakes combining rich chocolate and fresh blueberries, perfect for a special breakfast or brunch.
Ingredients
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
- 1/2 cup chocolate chips
- 1/2 cup fresh blueberries
- Maple syrup for serving
Instructions
- Combine the dry mix. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Mix the wet ingredients. In a second bowl, whisk the buttermilk, egg, and melted butter until smooth.
- Bring it together gently. Pour the wet mixture into the dry ingredients. Stir with a spatula just until combined. Don’t overmix—small lumps are normal.
- Fold in the add-ins. Gently fold in the chocolate chips and blueberries.
- Cook the pancakes. Heat a non-stick skillet or griddle over medium heat. Lightly butter or oil it. Pour about 1/4 cup batter per pancake.
- Flip at the right time. Cook until bubbles form on top and the edges look set, about 2–3 minutes. Flip and cook another 1–2 minutes until golden and cooked through.
- Serve warm. Add maple syrup and any toppings you like.
Notes
Don’t overmix the batter to keep pancakes fluffy. Keep pancakes warm in a low oven if serving buffet-style.
