Ingredients
- 2 cups cooked chicken, shredded
- 1 cup black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 red bell pepper, diced
- 1 avocado, sliced
- 1/2 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup medium salsa
- 4 large tortillas
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Heat the olive oil in a skillet over medium heat. Add the shredded chicken, black beans, corn, red bell pepper, cumin, salt, and pepper. Stir and cook for about 5-7 minutes, until heated through.
- Warm the tortillas in a separate pan or microwave for easy folding.
- Layer the chicken mixture, avocado slices, shredded cheese, and a spoonful of salsa on each tortilla.
- Roll up the tortillas tightly, securing the ends as you go, and use a toothpick if necessary.
- Serve immediately or wrap in foil for a portable lunch!
