Description

Delicious wraps filled with grilled chicken, zesty black beans, corn, and vibrant veggies, perfect for weeknight dinners or a laid-back lunch.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup medium salsa
  • 4 large tortillas
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste


Instructions

  1. Heat the olive oil in a skillet over medium heat. Add the shredded chicken, black beans, corn, red bell pepper, cumin, salt, and pepper. Stir and cook for about 5-7 minutes, until heated through.
  2. Warm the tortillas in a separate pan or microwave for easy folding.
  3. Layer the chicken mixture, avocado slices, shredded cheese, and a spoonful of salsa on each tortilla.
  4. Roll up the tortillas tightly, securing the ends as you go, and use a toothpick if necessary.
  5. Serve immediately or wrap in foil for a portable lunch!

Notes

Feel free to swap out the chicken for turkey or plant-based proteins. Can be served with guacamole, tortilla chips, or a salad.
