Description

A flavorful twist on traditional tacos featuring smoky, spicy salmon and fresh corn avocado peach salsa.


Ingredients

  • Salmon fillets
  • Chipotle powder
  • Lime juice
  • Taco shells
  • Fresh corn
  • Avocado
  • Peach
  • Cilantro
  • Greek yogurt
  • Spices (salt, pepper, chili powder)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the salmon fillets with chipotle powder, lime juice, salt, and pepper. Bake for 12-15 minutes, or until cooked through.
  3. Prepare the corn avocado peach salsa. In a bowl, mix fresh corn, diced avocado, diced peach, chopped cilantro, and a squeeze of lime juice.
  4. Combine Greek yogurt with chopped cilantro and seasoning in a separate bowl for the cilantro yogurt sauce.
