Ingredients
- 2 chicken breasts
- 1 tablespoon smoked paprika
- 1 teaspoon chili powder
- 1 cup cooked rice
- 1 can black beans, drained and rinsed
- 1 cup diced tomatoes
- 1 cup shredded lettuce
- 1/2 cup corn
- 1/2 cup chipotle ranch dressing
- 4 large tortillas
- Salt and pepper to taste
- Olive oil for grilling
Instructions
- Preheat your grill to medium-high heat.
- Season the chicken breasts generously with smoked paprika, chili powder, salt, and pepper.
- Drizzle a little olive oil on the grill to prevent sticking, then place the chicken on it.
- Grill the chicken for about 6-7 minutes per side or until it reaches an internal temperature of 165°F (74°C).
- Once grilled, remove the chicken from the grill and allow it to rest for a few minutes before slicing it into bite-sized pieces.
- In each tortilla, layer a generous scoop of rice, black beans, a portion of the grilled chicken, diced tomatoes, shredded lettuce, corn, and drizzle with chipotle ranch dressing.
- Wrap the tortilla tightly around the filling, ensuring it stays intact.
- Serve warm with extra dressing on the side for dipping.
