Description

A flavorful burrito filled with smoky grilled chicken, black beans, and chipotle ranch dressing, perfect for busy weeknights or laid-back weekends.


Ingredients

  • 2 chicken breasts
  • 1 tablespoon smoked paprika
  • 1 teaspoon chili powder
  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1/2 cup corn
  • 1/2 cup chipotle ranch dressing
  • 4 large tortillas
  • Salt and pepper to taste
  • Olive oil for grilling


Instructions

  1. Preheat your grill to medium-high heat.
  2. Season the chicken breasts generously with smoked paprika, chili powder, salt, and pepper.
  3. Drizzle a little olive oil on the grill to prevent sticking, then place the chicken on it.
  4. Grill the chicken for about 6-7 minutes per side or until it reaches an internal temperature of 165°F (74°C).
  5. Once grilled, remove the chicken from the grill and allow it to rest for a few minutes before slicing it into bite-sized pieces.
  6. In each tortilla, layer a generous scoop of rice, black beans, a portion of the grilled chicken, diced tomatoes, shredded lettuce, corn, and drizzle with chipotle ranch dressing.
  7. Wrap the tortilla tightly around the filling, ensuring it stays intact.
  8. Serve warm with extra dressing on the side for dipping.
