Description

A zesty and flavorful dish combining smoky chipotle with the brightness of lime, perfect for quick weeknight dinners or special gatherings.


Ingredients

  • 2 tablespoons oil
  • 1 lime (juice and zest)
  • 1 chipotle chili in adobo (or to taste)
  • 2 teaspoons adobo sauce
  • 1/2 teaspoon cumin
  • 1 clove garlic (grated)
  • Salt and pepper to taste
  • 2-pound salmon fillet


Instructions

  1. Blend the Marinade: In a blender or food processor, combine the oil, lime juice and zest, chipotle chili, adobo sauce, cumin, and garlic. Blend until smooth.
  2. Prepare the Salmon: Preheat your oven to 400°F (200°C). Place the salmon fillet on a sheet of foil on a baking sheet. Pat dry and season with salt and pepper.
  3. Marinate the Salmon: Spread the chipotle marinade evenly over the salmon fillet.
  4. Bake: Cook in the preheated oven for 10-15 minutes, until the salmon flakes easily with a fork.

Notes

Serve with avocado salad, cilantro lime rice, or roasted vegetables for a complete meal. Don’t overcook to avoid dryness.
