Ingredients
- 2 tablespoons oil
- 1 lime (juice and zest)
- 1 chipotle chili in adobo (or to taste)
- 2 teaspoons adobo sauce
- 1/2 teaspoon cumin
- 1 clove garlic (grated)
- Salt and pepper to taste
- 2-pound salmon fillet
Instructions
- Blend the Marinade: In a blender or food processor, combine the oil, lime juice and zest, chipotle chili, adobo sauce, cumin, and garlic. Blend until smooth.
- Prepare the Salmon: Preheat your oven to 400°F (200°C). Place the salmon fillet on a sheet of foil on a baking sheet. Pat dry and season with salt and pepper.
- Marinate the Salmon: Spread the chipotle marinade evenly over the salmon fillet.
- Bake: Cook in the preheated oven for 10-15 minutes, until the salmon flakes easily with a fork.
Notes
