Ingredients
- 2 cups corn (fresh, frozen, or canned)
- 1/2 cup red onion, finely chopped
- 1/2 cup jalapeños, finely chopped (adjust to taste)
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- Salt, to taste
Instructions
- Prep the corn: If you’re using fresh corn, cook it and let it cool. For frozen corn, simply thaw it.
- Combine ingredients: In a large mixing bowl, add the corn, red onion, jalapeños, and cilantro.
- Add lime and season: Squeeze the lime juice over your mixture and season it with salt to taste.
- Mix and serve: Stir everything together until well combined. Serve it as an appetizer, a dip, or a topping for burritos, burrito bowls, salads, or quesadillas.
