This Chipotle BBQ Chicken is a smoky, spicy, and sweet dish that transforms a simple meal into an extraordinary experience, perfect for gatherings or weeknight dinners.
Ingredients
- 4 Chicken breasts (boneless, skinless)
- 1 cup Homemade chipotle beer BBQ sauce
- 2 Fresh corn on the cob (for creamed corn)
- 1/2 cup Heavy cream
- 2 tbsp Butter
- Salt and pepper (for seasoning)
Instructions
- Preheat your grill to medium-high heat.
- Season the chicken breasts generously with salt and pepper.
- Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
- Brush the homemade chipotle beer BBQ sauce onto the chicken during the last few minutes of cooking, allowing it to caramelize slightly.
- Prepare the creamed grilled corn: Grill the corn until charred, then slice it off the cob. In a bowl, mix the corn with cream, butter, and a pinch of salt.
- Serve the BBQ chicken hot, alongside the creamed grilled corn.
Notes
For extra flavor, marinate the chicken in the BBQ sauce for a few hours or overnight before grilling. Use a meat thermometer to check for doneness to prevent dry chicken.
