Description

Warm, cheesy, and satisfying Chicken Quesadillas, perfect for weeknight dinners or entertaining friends.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Monterey jack)
  • 1 cup bell peppers, sliced
  • 1/2 cup onion, sliced
  • 4 flour tortillas
  • 2 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. Heat the oil in a skillet over medium heat.
  2. Add sliced bell peppers and onions, cooking until softened (about 3-4 minutes).
  3. Mix together the shredded chicken, cooked veggies, and cheese in a bowl. Season with salt and pepper to taste.
  4. Place a tortilla in the skillet. Spoon the chicken mixture onto one half and fold the tortilla.
  5. Cook until the bottom is golden brown, then flip and cook the other side until perfectly crispy.
  6. Repeat with remaining tortillas, adding more oil if needed.
  7. Cut into wedges and serve warm.
