Warm, cheesy, and satisfying Chicken Quesadillas, perfect for weeknight dinners or entertaining friends.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or Monterey jack)
- 1 cup bell peppers, sliced
- 1/2 cup onion, sliced
- 4 flour tortillas
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat the oil in a skillet over medium heat.
- Add sliced bell peppers and onions, cooking until softened (about 3-4 minutes).
- Mix together the shredded chicken, cooked veggies, and cheese in a bowl. Season with salt and pepper to taste.
- Place a tortilla in the skillet. Spoon the chicken mixture onto one half and fold the tortilla.
- Cook until the bottom is golden brown, then flip and cook the other side until perfectly crispy.
- Repeat with remaining tortillas, adding more oil if needed.
- Cut into wedges and serve warm.
Notes
Serve with salsa, guacamole, or sour cream. These quesadillas are versatile and can be served with a side salad or Mexican rice.
