Ingredients
- 2 large flour tortillas
- 2 cups shredded cooked chicken
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup diced onion
- 1/2 cup diced bell peppers
- 1 tablespoon olive oil
- 1 teaspoon taco seasoning
- Salsa (for serving)
- Sour cream (for serving)
Instructions
- Heat the olive oil in a skillet over medium heat.
- Add the diced onion and bell peppers. Sauté until they are softened, about 3-4 minutes.
- Incorporate the shredded chicken and taco seasoning, stirring well until everything is heated through.
- Place one tortilla in the skillet. Sprinkle half of the cheese onto one half of the tortilla.
- Add the chicken mixture over the cheese, then top with the remaining cheese.
- Fold the tortilla over and cook until golden brown, around 3-4 minutes on each side.
- Repeat with the second tortilla.
- Slice and serve with salsa and sour cream.
