Description

Ingredients

  • 2 large flour tortillas
  • 2 cups shredded cooked chicken
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup diced onion
  • 1/2 cup diced bell peppers
  • 1 tablespoon olive oil
  • 1 teaspoon taco seasoning
  • Salsa (for serving)
  • Sour cream (for serving)


Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the diced onion and bell peppers. Sauté until they are softened, about 3-4 minutes.
  3. Incorporate the shredded chicken and taco seasoning, stirring well until everything is heated through.
  4. Place one tortilla in the skillet. Sprinkle half of the cheese onto one half of the tortilla.
  5. Add the chicken mixture over the cheese, then top with the remaining cheese.
  6. Fold the tortilla over and cook until golden brown, around 3-4 minutes on each side.
  7. Repeat with the second tortilla.
  8. Slice and serve with salsa and sour cream.
