Description

A delightful chicken quesadilla recipe that is quick and easy to prepare, perfect for busy families and gatherings.


Ingredients

  • ½ teaspoon salt
  • ½ teaspoon chili powder
  • ¼ teaspoon pepper
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon cumin
  • 1 tablespoon oil (for cooking)
  • 1 large onion, diced
  • 4 cups cooked chicken, chopped
  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded medium cheddar cheese
  • 8 tortillas
  • Oil (for brushing, optional, about 2 tablespoons)


Instructions

  1. Combine the salt, chili powder, pepper, onion powder, garlic powder, and cumin in a small bowl to create a seasoning mix.
  2. Heat oil in a medium to large skillet over medium heat. Once hot, add the diced onions and sprinkle the seasoning over them. Sauté until the onions are soft, about 4-5 minutes.
  3. Remove the skillet from heat and mix in the chopped chicken with the onions. Set this mixture aside.
  4. If desired, lightly brush one side of each tortilla with oil for a crispier texture.
  5. Heat a large skillet or griddle over medium-low heat. Place a tortilla, oiled side down, in the skillet.
  6. Sprinkle a handful of shredded cheese on half of the tortilla, followed by about ½ to ⅔ cup of the chicken and onion mixture. Add a bit more cheese on top before folding the tortilla over.
  7. Cook for 2-3 minutes until golden brown, then flip and cook the other side for another 2-3 minutes.
  8. Once cooked, cut the quesadilla into triangles and serve hot!

Notes

Serve with fresh guacamole, salsa, or sour cream for dipping. You can also create a quesadilla platter for guests to mix and match their favorite dips.
