A quick and flavorful twist on classic chicken fajitas wrapped in cheesy tortillas, perfect for a weeknight meal.
Ingredients
- 2 chicken breasts, diced
- 1 onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 teaspoon fajita seasoning
- 4 flour tortillas
- 1 cup shredded cheese (cheddar or Mexican blend)
- Oil for cooking
Instructions
- Heat a splash of oil in a skillet over medium-high heat.
- Add the sliced onions and both bell peppers; sauté until they start to soften.
- Stir in the diced chicken and sprinkle with fajita seasoning. Cook until the chicken is no longer pink.
- In a separate skillet, place one tortilla down and spoon a generous amount of the chicken mixture on top. Add a handful of cheese before topping with another tortilla.
- Cook for about 3-4 minutes per side, until both tortillas are golden brown and the cheese is melted.
- Remove from heat and cut into wedges. Serve warm.
