Description

A quick and flavorful twist on classic chicken fajitas wrapped in cheesy tortillas, perfect for a weeknight meal.


Ingredients

  • 2 chicken breasts, diced
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 teaspoon fajita seasoning
  • 4 flour tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Oil for cooking


Instructions

  1. Heat a splash of oil in a skillet over medium-high heat.
  2. Add the sliced onions and both bell peppers; sauté until they start to soften.
  3. Stir in the diced chicken and sprinkle with fajita seasoning. Cook until the chicken is no longer pink.
  4. In a separate skillet, place one tortilla down and spoon a generous amount of the chicken mixture on top. Add a handful of cheese before topping with another tortilla.
  5. Cook for about 3-4 minutes per side, until both tortillas are golden brown and the cheese is melted.
  6. Remove from heat and cut into wedges. Serve warm.
