A warm plate of Chicken Enchiladas with Green Sauce that transforms basic ingredients into a flavorful dish, perfect for any occasion.
Ingredients
- 2 cups shredded chicken (rotisserie chicken works great!)
- 1 can green chiles
- 1 cup green enchilada sauce
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 8 flour tortillas
- 1/2 cup sour cream
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Combine the shredded chicken, green chiles, sour cream, and half of the cheese in a large mixing bowl. Season with salt and pepper to taste.
- Take a tortilla and fill it generously with the chicken mixture, rolling it tightly. Place each tortilla seam-side down in a greased baking dish.
- Repeat this process until all tortillas and filling are used.
- Pour the green enchilada sauce over the rolled tortillas and sprinkle the remaining cheese on top.
- Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.
- Let cool for a few minutes before serving to allow the filling to set.
