Description

A warm plate of Chicken Enchiladas with Green Sauce that transforms basic ingredients into a flavorful dish, perfect for any occasion.


Ingredients

  • 2 cups shredded chicken (rotisserie chicken works great!)
  • 1 can green chiles
  • 1 cup green enchilada sauce
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 8 flour tortillas
  • 1/2 cup sour cream
  • 1 tablespoon olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the shredded chicken, green chiles, sour cream, and half of the cheese in a large mixing bowl. Season with salt and pepper to taste.
  3. Take a tortilla and fill it generously with the chicken mixture, rolling it tightly. Place each tortilla seam-side down in a greased baking dish.
  4. Repeat this process until all tortillas and filling are used.
  5. Pour the green enchilada sauce over the rolled tortillas and sprinkle the remaining cheese on top.
  6. Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.
  7. Let cool for a few minutes before serving to allow the filling to set.
