Description

Delicious chicken enchiladas filled with shredded chicken and cheese, topped with enchilada sauce and baked to perfection.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 can (10 oz) enchilada sauce
  • 8 small tortillas
  • 1/2 cup diced onions (optional)
  • 1/2 cup sour cream (optional)
  • Olive oil for greasing
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded chicken, half of the cheese, onions (if desired), and season with salt and pepper in a bowl.
  3. Grease a baking dish and spread a bit of enchilada sauce at the bottom.
  4. Fill each tortilla with the chicken mixture, roll it up tightly, and place it seam-side down in the dish.
  5. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with the remaining cheese.
  6. Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
  7. Serve hot, topped with dollops of sour cream if you wish.

Notes

For added texture, sauté the onions before mixing. Use a combination of cheeses for more flavor.
