Description

A flavorful one-pan wonder featuring juicy chicken breasts, fresh tomatoes, creamy mozzarella, and a drizzle of pesto.


Ingredients

  • 4 chicken breasts
  • 2 large tomatoes, sliced
  • 1 cup fresh mozzarella cheese, sliced
  • 1/2 cup pesto
  • 3 tablespoons balsamic glaze
  • Salt and pepper to taste
  • Fresh basil leaves for garnish
  • Olive oil for cooking


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season the chicken breasts with salt and pepper.
  3. Cook the chicken in the skillet for about 6-7 minutes on each side until fully cooked.
  4. Remove the chicken from the skillet and set aside.
  5. Layer the sliced tomatoes on top of the chicken in the same skillet.
  6. Drizzle pesto over the tomatoes, then top with mozzarella cheese.
  7. Cover the skillet and cook until the cheese is melted, about 3-4 minutes.
  8. Drizzle with balsamic glaze right before serving.
  9. Garnish with fresh basil leaves and enjoy!

Notes

Feel free to substitute mozzarella with provolone or use vegetable broth instead of oil for a lighter version.
