Ingredients
- 4 chicken breasts
- 2 large tomatoes, sliced
- 1 cup fresh mozzarella cheese, sliced
- 1/2 cup pesto
- 3 tablespoons balsamic glaze
- Salt and pepper to taste
- Fresh basil leaves for garnish
- Olive oil for cooking
Instructions
- Heat olive oil in a skillet over medium heat.
- Season the chicken breasts with salt and pepper.
- Cook the chicken in the skillet for about 6-7 minutes on each side until fully cooked.
- Remove the chicken from the skillet and set aside.
- Layer the sliced tomatoes on top of the chicken in the same skillet.
- Drizzle pesto over the tomatoes, then top with mozzarella cheese.
- Cover the skillet and cook until the cheese is melted, about 3-4 minutes.
- Drizzle with balsamic glaze right before serving.
- Garnish with fresh basil leaves and enjoy!
Notes
Feel free to substitute mozzarella with provolone or use vegetable broth instead of oil for a lighter version.
