Description

A flavorful dish featuring crispy bacon, juicy chicken, and creamy ranch dressing melted in a crispy tortilla, perfect for any occasion.


Ingredients

  • 4 large flour tortillas
  • 1.5 cups shredded cheddar cheese
  • 1 cup chopped rotisserie chicken (or any precooked boneless chicken)
  • 6 pieces of crispy bacon (cooked)
  • 2 scallions (finely diced)
  • 4 tbsp ranch dressing (plus more for serving)
  • 2 tbsp oil or butter (such as olive oil or vegetable oil)
  • Salt to taste


Instructions

  1. Place 1 tortilla on a cutting board. Sprinkle half a cup of shredded cheddar on one half.
  2. Layer with half of the chopped chicken, half of the crispy bacon, half of the scallions, and a drizzle of ranch dressing (about 2 tbsp). Top with another half cup of cheddar cheese.
  3. Fold the tortilla over to cover the filling.
  4. In a large frying pan, heat the oil over medium heat. Swirl to coat the pan.
  5. Carefully place the quesadilla in the pan and cook for 2-5 minutes, until the bottom is crispy and golden, and the cheese starts to melt.
  6. Gently flip the quesadilla and cook for another 2-3 minutes, ensuring both sides are golden and the cheese has melted.
  7. Remove from heat and sprinkle with a pinch of salt while it’s still hot.
  8. Repeat the process for the remaining ingredients.
  9. Serve with additional ranch, salsa, or pickled jalapeños if desired.

Notes

For a gluten-free option, swap the flour tortillas with gluten-free versions.
