- 2 cups cooked chicken, shredded
- 4 cups chicken broth
- 1 cup milk

- 1 tablespoon baking powder

- 1/2 teaspoon pepper
- 1/4 cup butter, melted (or margarine)
- 1 egg
- 1 cup mixed vegetables (carrots, peas, celery)
- 1 onion, chopped
Instructions
- In a large pot, heat the chicken broth and add the chopped onion along with the mixed vegetables. Cook until the veggies are tender, about 5-7 minutes.
- Stir in the shredded chicken and let it warm through.
- In a separate bowl, mix together the flour, baking powder, salt, and pepper.
- In another bowl, whisk together the milk, melted butter, and egg until combined.
- Gradually mix the wet ingredients with the dry ingredients until just combined; do not overmix.
- Drop spoonfuls of the dumpling mixture over the simmering soup.
