  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup milk

  • 1 tablespoon baking powder

  • 1/2 teaspoon pepper
  • 1/4 cup butter, melted (or margarine)
  • 1 egg
  • 1 cup mixed vegetables (carrots, peas, celery)
  • 1 onion, chopped


Instructions

  1. In a large pot, heat the chicken broth and add the chopped onion along with the mixed vegetables. Cook until the veggies are tender, about 5-7 minutes.
  2. Stir in the shredded chicken and let it warm through.
  3. In a separate bowl, mix together the flour, baking powder, salt, and pepper.
  4. In another bowl, whisk together the milk, melted butter, and egg until combined.
  5. Gradually mix the wet ingredients with the dry ingredients until just combined; do not overmix.
