Ingredients
- 2 cups cooked chicken, shredded
- 4 cups chicken broth
- 1 medium onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 cup milk
- 1 tablespoon butter, melted
Instructions
- Sauté the onion, carrots, and celery in a little olive oil over medium heat until softened, about 5 minutes.
- Add the minced garlic and cook for another minute.
- Pour in the chicken broth and bring to a boil. Stir in thyme, salt, and pepper.
- Reduce the heat and add the shredded chicken.
- In a mixing bowl, combine the flour, baking powder, and salt for the dumplings. Stir in the milk and melted butter until just combined.
- Drop spoonfuls of the dumpling mixture onto the simmering broth.
- Cover the pot and cook for 15-20 minutes without lifting the lid, until dumplings are fluffy and cooked through.

For a gluten-free option, substitute gluten-free flour for the dumplings. Optional ingredients can include fresh herbs or spices for added flavor.
