Description

Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 1 tablespoon butter, melted


Instructions

  1. Sauté the onion, carrots, and celery in a little olive oil over medium heat until softened, about 5 minutes.
  2. Add the minced garlic and cook for another minute.
  3. Pour in the chicken broth and bring to a boil. Stir in thyme, salt, and pepper.
  4. Reduce the heat and add the shredded chicken.
  5. In a mixing bowl, combine the flour, baking powder, and salt for the dumplings. Stir in the milk and melted butter until just combined.
  6. Drop spoonfuls of the dumpling mixture onto the simmering broth.
  7. Cover the pot and cook for 15-20 minutes without lifting the lid, until dumplings are fluffy and cooked through.

Notes

For a gluten-free option, substitute gluten-free flour for the dumplings. Optional ingredients can include fresh herbs or spices for added flavor.
