Instructions
- Preheat the oven to 400°F (200°C).
- Roll out the pie crust on a parchment-lined baking sheet, creating a circle about 12 inches in diameter.
- Arrange the halved cherry tomatoes in the center of the crust, leaving a 2-inch border.
- Sprinkle the cheese over the tomatoes evenly.
- Drizzle with olive oil and season generously with salt and pepper.
- Fold the edges of the pie crust over the filling, creating pleats as you go.
- Bake for 25-30 minutes, or until the crust is golden brown.
