Ingredients
- 4 pieces Russet Potatoes (peeled and sliced into ¼-inch slices, about 2 pounds)
- 1 piece Yellow Onion (sliced into rings)
- 3 tablespoons Unsalted Butter
- 3 tablespoons All-Purpose Flour
- ½ teaspoon Kosher Salt
- 2 cups Whole Milk (room temperature)
- 1 ½ cups Mild Cheddar Cheese (shredded)
- Salt and Pepper (to taste)
Instructions
- Preheat your oven to 375°F (190°C).
- Melt the butter in a saucepan over medium heat.
- Whisk in the flour and cook for about 1 minute, until lightly golden.
- Gradually add the milk, whisking continuously until the mixture thickens (about 5-7 minutes).
- Stir in the salt and half of the cheese until it melts.
- Layer the dish: In a baking dish, place a layer of potato slices, then a layer of onion rings. Pour a layer of cheese sauce over them. Repeat until you run out of ingredients, finishing with cheese sauce on top.
- Cover the dish with aluminum foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes, until the top is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
You can substitute different types of cheese, like Gruyère or Pepper Jack, for added flavor. Consider using low-fat milk or a dairy-free alternative for a lighter version.
