Description
A comforting and delicious Cheesy Chicken Pasta that’s quick to prepare and full of flavor.
Ingredients
- 250g pasta, uncooked
- 2 tbsps oil
- 4 cloves garlic, minced
- 275g chicken, cut into bite-sized pieces
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp red chilli powder
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp onion powder
- 1/4 tsp oregano
- 2 tbsps tomato paste
- 1 tsp chilli sauce/sriracha
- 130ml milk
- 110ml double cream
- 100g mozzarella cheese + extra to sprinkle on top
- 100-120ml pasta water
Instructions
- Cook the pasta: In a pot of salted boiling water, add the pasta along with a splash of oil. Cook until al dente, then drain, reserving some pasta water.
- Sauté the garlic: In a large pan, heat oil over medium heat and add the minced garlic. Sauté until light golden.
- Cook the chicken: Add the chopped chicken to the pan, cooking for 3-4 minutes until it turns white.
- Season the chicken: Sprinkle in salt, black pepper, red chilli powder, garlic powder, paprika, onion powder, and oregano. Stir well to combine.
- Incorporate the sauces: Add the tomato paste and a splash of sriracha, cooking for about 1 minute.
- Make it creamy: Pour in the milk and cream, bringing the mixture to a simmer over medium-high heat until it starts to bubble and thicken.
- Add the cheese: Stir in the mozzarella cheese until melted and smooth. Gradually add the reserved pasta water until you reach your desired sauce consistency.
- Combine with pasta: Add the cooked pasta to the sauce, tossing to coat evenly. Heat through for a minute.
- Serve hot: Plate your Cheesy Chicken Pasta and sprinkle extra cheese on top for good measure.
Notes
Garnish with freshly chopped parsley or basil. Pair with a light salad or garlic bread for a complete meal.
