Ingredients
- 2 cups shredded rotisserie chicken
- 2 cups shredded cheese (cheddar or Mexican blend)
- 8 flour tortillas
- 2 cups red enchilada sauce
- 1/2 cup diced onions
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the shredded chicken, 1 cup of cheese, diced onions, garlic powder, cumin, salt, and pepper in a large bowl for the filling.
- Spoon a generous amount of the chicken mixture into the center of one tortilla, then roll it up tightly.
- Place the filled tortillas seam-side down in a greased baking dish.
- Pour the red enchilada sauce evenly over the tortillas, then sprinkle the remaining cheese on top.
- Bake in the preheated oven for 20 to 25 minutes, until the cheese is bubbly and golden brown.
- Remove from the oven, garnish with fresh cilantro if desired, and serve warm.
Notes
For an extra creamy texture, add a layer of cream cheese to the filling. Use a mix of different cheeses and feel free to add jalapeños for a spicy kick.
