Description

A comforting and flavorful dish filled with shredded chicken, gooey cheese, and rich enchilada sauce, perfect for family meals or entertaining.


Ingredients

  • 2 cups shredded rotisserie chicken
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 8 flour tortillas
  • 2 cups red enchilada sauce
  • 1/2 cup diced onions
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded chicken, 1 cup of cheese, diced onions, garlic powder, cumin, salt, and pepper in a large bowl for the filling.
  3. Spoon a generous amount of the chicken mixture into the center of one tortilla, then roll it up tightly.
  4. Place the filled tortillas seam-side down in a greased baking dish.
  5. Pour the red enchilada sauce evenly over the tortillas, then sprinkle the remaining cheese on top.
  6. Bake in the preheated oven for 20 to 25 minutes, until the cheese is bubbly and golden brown.
  7. Remove from the oven, garnish with fresh cilantro if desired, and serve warm.

Notes

For an extra creamy texture, add a layer of cream cheese to the filling. Use a mix of different cheeses and feel free to add jalapeños for a spicy kick.
