Ingredients
- 1 pound ground beef
- 2 cups diced potatoes
- 1 onion, chopped
- 4 cups beef broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a large pot, cook the ground beef with the chopped onion over medium heat until the beef is no longer pink.
- Stir in the diced potatoes and pour in the beef broth. Bring the mixture to a boil, then reduce the heat to a simmer. Cook until the potatoes are tender, about 15 minutes.
- Gently fold in the heavy cream and shredded cheddar cheese, stirring until melted and well combined.
- Taste and add salt and pepper to enhance the flavor.
- Ladle the soup into bowls, garnishing with chopped parsley and more cheese if you wish.
Notes
For a leaner dish, substitute ground turkey. Pair with crusty bread or a fresh garden salad.
