Description

A comforting bowl of chewy beef and creamy potatoes mixed in a delicious cheesy broth.


Ingredients

  • 1 pound ground beef
  • 2 cups diced potatoes
  • 1 onion, chopped
  • 4 cups beef broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish


Instructions

  1. In a large pot, cook the ground beef with the chopped onion over medium heat until the beef is no longer pink.
  2. Stir in the diced potatoes and pour in the beef broth. Bring the mixture to a boil, then reduce the heat to a simmer. Cook until the potatoes are tender, about 15 minutes.
  3. Gently fold in the heavy cream and shredded cheddar cheese, stirring until melted and well combined.
  4. Taste and add salt and pepper to enhance the flavor.
  5. Ladle the soup into bowls, garnishing with chopped parsley and more cheese if you wish.

Notes

For a leaner dish, substitute ground turkey. Pair with crusty bread or a fresh garden salad.
