Description
A flavor-packed side dish featuring perfectly grilled potatoes loaded with cheddar cheese and crispy bacon.
Ingredients
- 4 medium-sized potatoes (Yukon Gold or red potatoes)
- 6 strips of bacon
- 1 cup shredded sharp cheddar cheese
- 1/4 cup barbecue sauce
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh chives for garnish (optional)
Instructions
- Preheat your grill to medium-high heat (about 400°F).
- Wash and slice the potatoes into 1-inch cubes. You can leave the skin on for added texture.
- Toss the potato cubes with olive oil, salt, and pepper until they are well-coated.
- Partially cook the bacon in a skillet until crispy. Once cool, crumble it into bits.
- Thread the seasoned potato cubes onto skewers (if using wooden skewers, soak them in water beforehand to prevent burning).
- Grill the potato skewers for about 10-15 minutes, turning occasionally, until tender and golden brown.
- Remove from the grill and brush with barbecue sauce. Top generously with cheddar cheese and bacon bits.
- Return to the grill for an additional 2-3 minutes, just enough to melt the cheese.
- Serve hot, garnished with fresh chives if desired.
Notes
For a healthier twist, opt for turkey bacon or a meat alternative. You can experiment with different cheeses for a unique flavor.
