Description

A flavor-packed side dish featuring perfectly grilled potatoes loaded with cheddar cheese and crispy bacon.


Ingredients

  • 4 medium-sized potatoes (Yukon Gold or red potatoes)
  • 6 strips of bacon
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup barbecue sauce
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh chives for garnish (optional)


Instructions

  1. Preheat your grill to medium-high heat (about 400°F).
  2. Wash and slice the potatoes into 1-inch cubes. You can leave the skin on for added texture.
  3. Toss the potato cubes with olive oil, salt, and pepper until they are well-coated.
  4. Partially cook the bacon in a skillet until crispy. Once cool, crumble it into bits.
  5. Thread the seasoned potato cubes onto skewers (if using wooden skewers, soak them in water beforehand to prevent burning).
  6. Grill the potato skewers for about 10-15 minutes, turning occasionally, until tender and golden brown.
  7. Remove from the grill and brush with barbecue sauce. Top generously with cheddar cheese and bacon bits.
  8. Return to the grill for an additional 2-3 minutes, just enough to melt the cheese.
  9. Serve hot, garnished with fresh chives if desired.
