Ingredients
- 1 head of cauliflower, chopped
- 1 head of broccoli, chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine the chopped cauliflower and broccoli.
- Add the halved cherry tomatoes, red onion, and crumbled feta cheese to the bowl.
- In a separate small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper.
- Pour the dressing over the salad and toss everything well to combine.
- Serve immediately, or for enhanced flavors, refrigerate for up to one day.
Notes
This salad can be made vegan by omitting the feta cheese and using agave syrup instead of honey in the dressing. It’s best enjoyed fresh but can be stored in the fridge for up to one day.
