  • 1 cup granulated sugar, divided
  • 1 tablespoon lemon juice

  • ½ teaspoon salt
  • 1 cup milk
  • ½ cup unsalted butter (melted)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the cherries, ½ cup sugar, lemon juice, and vanilla in a bowl. Stir to mix well, then set aside.
  3. Whisk together flour, baking powder, salt, and the remaining ½ cup sugar in another bowl.
  4. Pour in the milk and melted butter, stirring until just combined. Avoid overmixing for a lighter texture.
  5. Pour the cherry mixture evenly into a preheated cast-iron skillet. Spoon the batter over the cherries, ensuring they are covered.
  6. Bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted comes out clean.
