Description
A comforting Italian twist on the classic Caprese salad, featuring cheese tortellini, creamy mozzarella, fresh tomatoes, and basil.
Ingredients
- 20 oz cheese tortellini, uncooked
- 10 oz cherry tomatoes, halved
- 8 oz mozzarella pearls
- 1 cup chopped spinach
- 1/4 cup chopped fresh basil
- 1/2 cup extra-virgin olive oil
- 2 tablespoons balsamic vinegar
- 3–4 garlic cloves, minced
- 3/4 teaspoon Italian seasoning
- 1/2 teaspoon salt
- Freshly ground black pepper, to taste
- Balsamic glaze, for drizzling
Instructions
- Bring a large pot of water to a rolling boil and salt generously.
- Cook the tortellini according to package directions until al dente.
- Drain and cool the tortellini if desired.
- Transfer tortellini to a bowl and add spinach, tomatoes, mozzarella, basil, and garlic.
- Drizzle olive oil and balsamic vinegar over the ingredients.
- Sprinkle Italian seasoning, salt, and pepper.
- Toss gently to coat the salad.
- Cover and chill for at least 30 minutes.
- Serve with a drizzle of balsamic glaze and extra basil.
Notes
For gluten-free, swap in gluten-free tortellini. For a vegan version, use plant-based cheese and vegan tortellini.
