A vibrant and refreshing Caprese Pasta Salad featuring tangy tomatoes, creamy mozzarella, and fragrant basil, perfect for summer gatherings.
Ingredients
- 8 ounces pasta (preferably fusilli or rotini)
- 1 cup cherry tomatoes, halved
- 1 cup mozzarella balls (bocconcini), halved
- 1/2 cup fresh basil leaves, chopped
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- Cook the pasta according to the package instructions. Once cooked, drain and allow to cool.
- Combine the cooled pasta, halved cherry tomatoes, mozzarella, and chopped basil in a large mixing bowl.
- Whisk together the olive oil, balsamic vinegar, salt, and pepper in a separate smaller bowl until emulsified.
- Pour the dressing over the pasta salad, and gently toss everything to combine.
- Chill the salad in the refrigerator for at least 30 minutes before serving for the best flavor.
Notes
For best results, keep the dressing separate until ready to serve if making in advance.
