Description
A flavorful low-carb dish combining cauliflower rice with Cajun sausage and bell peppers, perfect for quick weeknight dinners.
Ingredients
- 2 (10oz) bags frozen cauliflower rice (about 6 cups)
- 1 (13oz) package of cajun-style andouille sausage (sliced)
- 1 large bell pepper (diced)
- 1 small yellow onion (diced)
- 2 tbsp olive oil
- 1 tbsp cajun seasoning
- Salt & pepper to taste
Instructions
- Heat 2 tbsp of olive oil in a large skillet over medium heat.
- Add the diced bell pepper and onion. Sauté for a few minutes until they begin to soften.
- Stir in the sliced sausage and continue cooking for about 3-4 minutes, or until the sausage starts to brown.
- Mix in the frozen cauliflower rice (uncooked) and cajun seasoning. Stir well and let it cook for around 5 minutes, or until heated through.
- Taste the mixture. If needed, add additional cajun seasoning, and adjust salt, pepper, or garlic powder to your preference.
Notes
Feel free to substitute the andouille sausage with turkey sausage for a lighter option. Add vegetables based on availability.
