Description
A bold and flavorful Cajun Grilled Shrimp recipe, perfect for summer barbecues or quick weeknight dinners.
Ingredients
- 1.5 lbs shrimp (cleaned and de-veined)
- 2 Tbsp Cajun seasoning
- 1 lime (juice only)
- 2 Tbsp honey
- 2 red bell peppers
- 1 large red onion
- 2 Tbsp oil
- 1 Tbsp additional Cajun seasoning
- Salt (only if seasoning does not contain salt)
Instructions
- If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
- In a mixing bowl, combine the cleaned and deveined shrimp with 2 tablespoons of Cajun seasoning, lime juice, and honey. Mix well and let marinate.
- While the shrimp marinates, slice the onion and red bell peppers into thin strips. Toss them in a bowl with some oil and additional Cajun seasoning.
- Grease a vegetable basket to prevent the veggies from falling through and spread the onion and peppers evenly.
- Preheat your grill until the coals are ashed over, then place the vegetable basket on the grill. Cook the vegetables until they are halfway tender.
- Thread the marinated shrimp onto the soaked skewers, ensuring not to pack them too tightly. Drizzle remaining marinade over each skewer.
- Spray both sides of the shrimp skewers with a light coat of oil and place them on the grill. Grill for about 4 minutes per side, or until the shrimp are completely opaque.
- Remove the skewers and vegetable basket from the grill and serve immediately.
Notes
Marinate longer for more flavor. Don’t crowd the grill for even cooking.
