Description

Ingredients

  • 4 cod fillets (or cod loin)
  • 2 tsp Cajun seasoning
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • ½ tsp salt
  • 1 tbsp olive oil (for frying)
  • 1 tbsp unsalted butter (for frying)
  • 6 garlic cloves (minced)
  • 1 shallot (finely chopped)
  • ½ tsp smoked paprika
  • ¼ tsp chili flakes
  • 1 tsp dried sage
  • 1 cup low sodium chicken broth
  • 4 tbsp unsalted butter (for the sauce)
  • 8 ounces asparagus
  • 2 tbsp chopped parsley (plus more for serving)
  • 2 tbsp lemon juice


Instructions

  1. Pat the cod fillets dry with a paper towel and season both sides with salt, black pepper, garlic powder, and Cajun spices.
  2. Heat olive oil and 1 tablespoon of butter in a nonstick skillet over medium-high heat and add the seasoned cod fillets, searing for 3 minutes before flipping and cooking for an additional 2 minutes.
  3. Remove cod from skillet and lower the heat to medium-low, adding minced garlic and shallot to the skillet, sautéing for about 2 minutes.
  4. Stir in salt, pepper, sage, smoked paprika, and chili flakes, then pour in the chicken broth and bring to a gentle boil.
  5. Add the remaining 4 tablespoons of butter until melted into the sauce, then add asparagus and chopped parsley, cooking for 3 minutes.
  6. Return the cod fillets to the skillet and let simmer for 3 minutes until heated through. Drizzle with lemon juice and serve immediately.

Notes

For extra flavor, consider letting the cod marinate in Cajun seasoning for 30 minutes before cooking.
