Description

Classic fluffy buttermilk pancakes that are quick to make and perfect for any morning.


Ingredients

  • 1 cup (120 g) all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (240 ml) buttermilk
  • 1 large egg
  • 2 tablespoons melted butter, plus more for cooking
  • Vegetable oil or additional butter for the pan


Instructions

  1. Whisk dry ingredients in a large bowl.
  2. Combine buttermilk, egg, and melted butter in another bowl.
  3. Fold wet ingredients into dry until just combined; let batter rest briefly.
  4. Heat a skillet or griddle and test the temperature.
  5. Cook pancakes in batches until bubbles form, flip, and finish until golden.
  6. Serve immediately or keep warm in a low oven.

Notes

For dairy-free, substitute with plant-based milk plus lemon juice. For whole-wheat, use up to half whole-wheat pastry flour.
