A delightful dish featuring sautéed mushrooms and fresh spinach with farfalle pasta, perfect for quick meals any day of the week.
Ingredients
- 8 oz farfalle pasta
- 8 oz sliced mushrooms (any variety)
- 4 cups fresh spinach
- 2 tbsp olive oil
- 2 cloves minced garlic
- Salt, to taste
- Pepper, to taste
- Grated Parmesan cheese, for serving
Instructions
- Cook farfalle pasta according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Sauté minced garlic for about 1 minute until fragrant.
- Add sliced mushrooms to the skillet, cooking until browned for around 5-7 minutes.
- Stir in fresh spinach, cooking until wilted.
- Toss in the drained farfalle pasta, mixing well. Season with salt and pepper to taste.
- Serve hot, garnished with grated Parmesan cheese.
Notes
For a vegan option, omit Parmesan or substitute with nutritional yeast. You can swap farfalle with any pasta shape and spinach with kale or arugula.
