Ingredients
- 1 lb ground beef
- 1 cup rice (white or brown)
- 1 can black beans, drained and rinsed
- 1 cup shredded cheese (cheddar or your favorite blend)
- 1 cup fresh tomatoes, diced
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 cup water or broth (chicken or vegetable)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the ground beef and cook until browned, breaking it apart as it cooks.
- Stir in the rice, water (or broth), black beans, and season with salt and pepper.
- Bring to a boil, then reduce the heat to low. Cover and let it simmer for about 20 minutes, or until the rice is fully cooked.
- Once the rice has cooked, remove the skillet from the heat. Stir in the diced tomatoes and cheese until melted and combined.
