Description

Ingredients

  • 1 lb ground beef
  • 1 cup rice (white or brown)
  • 1 can black beans, drained and rinsed
  • 1 cup shredded cheese (cheddar or your favorite blend)
  • 1 cup fresh tomatoes, diced
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup water or broth (chicken or vegetable)


Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the ground beef and cook until browned, breaking it apart as it cooks.
  3. Stir in the rice, water (or broth), black beans, and season with salt and pepper.
  4. Bring to a boil, then reduce the heat to low. Cover and let it simmer for about 20 minutes, or until the rice is fully cooked.
