Description
A light and refreshing pasta salad featuring vibrant flavors of summer with fresh tomatoes, basil, and mozzarella.
Ingredients
- 12 oz pasta (preferably fusilli or penne)
- 2 cups tomatoes, diced (Roma or cherry tomatoes)
- 1 cup mozzarella, diced or mini mozzarella balls
- ½ cup fresh basil, chopped
- 2 cloves garlic, minced
- ¼ cup olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- Cook the pasta in salted boiling water according to package instructions. Drain and let cool.
- Prep the tomatoes, mozzarella, and basil while the pasta cools. Mince the garlic.
- Mix the dressing by whisking olive oil, balsamic vinegar, minced garlic, salt, and pepper together in a small bowl.
- Combine the cooled pasta, tomatoes, mozzarella, and basil in a large mixing bowl. Pour the dressing over and toss gently.
- Serve and enjoy! Optionally let sit for 15 minutes before serving to enhance flavors.
Notes
Chill before serving for enhanced flavor. This salad pairs well with grilled meats.
