Description

A light and refreshing pasta salad featuring vibrant flavors of summer with fresh tomatoes, basil, and mozzarella.


Ingredients

  • 12 oz pasta (preferably fusilli or penne)
  • 2 cups tomatoes, diced (Roma or cherry tomatoes)
  • 1 cup mozzarella, diced or mini mozzarella balls
  • ½ cup fresh basil, chopped
  • 2 cloves garlic, minced
  • ¼ cup olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste


Instructions

  1. Cook the pasta in salted boiling water according to package instructions. Drain and let cool.
  2. Prep the tomatoes, mozzarella, and basil while the pasta cools. Mince the garlic.
  3. Mix the dressing by whisking olive oil, balsamic vinegar, minced garlic, salt, and pepper together in a small bowl.
  4. Combine the cooled pasta, tomatoes, mozzarella, and basil in a large mixing bowl. Pour the dressing over and toss gently.
  5. Serve and enjoy! Optionally let sit for 15 minutes before serving to enhance flavors.

Notes

Chill before serving for enhanced flavor. This salad pairs well with grilled meats.
